Crofter Broth

One and One Half pints chicken stock
6oz streaky bacon
2 leeks
2 potatoes, sliced
2 carrots, diced
3oz cabbage, finely shredded
Thyme, parsley
Salt and pepper

Chop bacon into small dice. Clean and slice leeks. Put
bacon into heavy saucepan and cook over moderate
heat until it begins to colour, stirring frequently. Add
leeks and potatoes. Cover with buttered greaseproof
paper and lid and sweat for 10 minutes. Remove paper
and add carrots and cabbage. Stir in stock and seasoning
and cover with lid. Cook for approximately 20 minutes
over low heat until cabbage is soft.
