Kailkenny comes from Aberdeen, Scotland, and therefore is economical, especially if you have a cow that gives cream. Mash equal quantities of boiled cabbage and potatoes, observe that you may thus use up yesterday's leavings. Stir in a cupful of cream, season with pepper,
salt and chopped parsley; mash and mix well and serve.

North Easy Kailkenny. This is another vegetable dish of the area, made by mashing equal quantities of cooked potatoes and cooked cabbage then stirring in some cream.

1 Ib cabbage, cooked (500 g)
1 Ib potatoes, cooked (500 g)
2 tbsp cream
Salt and freshly ground black pepper

Mash cabbage and potatoes together. Stir in cream, season with pepper and salt. Mix thoroughly and serve very hot.
