Oatmeal Vegetable Soup

1 large onion
2 carrots diced
2 thick slices of turnip diced
2 leeks thinly sliced
One ounce of medium oatmeal
1 pint stock
Three quarters of a pint of milk
Chopped parsley salt and pepper

Put vegetables into a heavy pan and toss in a little fat
until fat is absorbed. Put on lid and sweat for 10 minutes. Add oatmeal and fry with vegetables for a few minutes Season, add stock and simmer for 45 minutes. Add heated milk and scatter over chopped parsley before serving.
