Scottish Toast

4 oatcakes.
Bloater paste.
2 eggs.
1 oz. (25 g.) butter.
Pinch of cayenne pepper
1 oz. (25 g.) browned breadcrumbs.


Oatcakes should be hot. Melt the butter and add 2 egg yolks and 1 egg white, the bloater paste and pepper. Stir, until thick. Pile the mixture on top of the oatcakes and sprinkle with browned breadcrumbs.
