Scottish Cooking, Stuffed Trout

Trout can be found in most of the rivers and lochs of
Scotland and provide sport for the fisherman as well as
excellent food. Here is one idea of what to do with your catch. The stuffing turns an already delicious dish into something special.

2 trout
1 tablespoon chopped parsley
1 teaspoon chopped fennel
1 finely chopped shallot
2 tablespoons cream
1 tablespoon butter
4 tablespoons ground oatcakes

Clean the trout. Melt the butter and add the finely chopped shallot and cook until soft. Add the parsley, fennel and ground oatcakes and season well with salt and freshly ground black pepper. Stuff the trout with this mixture and place in a buttered dish, spoon over the cream. Cover the dish in a pre heated oven and cook at Gas 4. 1 8O degree C (35O degrees F) for 30 minutes.
